Cranberry Almond Bars recipe

Looking for a fruity snack that doubles as a light dessert? These nutty, tart cranberry almond bars are your solution.

Ingredients:

1 ½ cups sugar
2 eggs
¾ cup unsalted butter, softened
1 teaspoon vanilla
1 ¼ cups all-purpose flour
¼ cup oats
½ teaspoon cinnamon
½ teaspoon salt
2 cups cranberries
½ cup chopped toasted almonds

Directions:

1) Preheat oven to 350°F. Lightly grease a 9-inch square baking pan.

2) Beat sugar and eggs together in a large bowl until fluffy. Add butter and vanilla; beat.

3) In a large bowl, stir together flour, oats, cinnamon, and salt. Add to egg mixture and stir until blended. Fold in cranberries and nuts.

4) Pour into prepared pan. Bake about 60 minutes, until a toothpick inserted in the middle comes out clean. Transfer to a wire rack to cool completely.

Tastes very good, but took much longer to cook than one hour, and was still quite wet at the bottom even then.

This tastes awesome. It's less a "bar" and more like a cake that has a bunch of stuff in it. I saw the post below about the time but mine baked for exactly one hour. I used a glass 9x9 so that may be the difference since glass cooks much faster. Thisnisnseptember and it tastes great. It would be awesome as the thanksgiving day breakfast bread. Crunchy top. Moist cake.

I doubled the recipe, added chocolate chips and baked in a cake pan... turned out awesome! Only had to cook one hour.
