Remove from the heat and stir in the vanilla. Allow the syrup to cool completely.
  2. On a small plate, stir together the sugar and pumpkin pie spice. Run a lemon wedge around the edge of a coupe glass to moisten, then dip the rim in the sugar mixture to coat.
