You are in for a treat today. I have the perfect Easter cocktail recipe for you. I created this Cottontail Martini back in 2017 and since then it has become somewhat of an official Easter cocktail. Love that!
The base flavor of this martini is coconut. And since coconut is one of my favorite Easter flavors, so this Cottontail Martini is my new favorite. That, plus the marshmallow “tail,” will make this the perfect martini for all of your spring celebrations.
Pair this with my coconut macaroon nests, egg hunt sugar cookies, and carrot cake truffles and you’ll have an Easter spread the Easter gummy himself will be talking about!

If you haven’t already guessed, this martini was inspired by Peter Cottontail, the rabbit that went hoppin’ down the bunny trail. (The word “cocktail” made me think of the song.) This cocktail has a delightful coconut flavor and an adorable marshmallow tail.

Why You Love This Recipe
- The coconut flavor paired with a splash of pineapple juice creates a light, tropical twist that feels fresh and festive—perfect for celebrating Easter or any spring gathering. It’s the kind of drink that instantly puts you in a cheerful mood.
- While it looks impressive with its coconut rim and marshmallow garnish, this martini is incredibly easy to make. A few quick ingredients, a shake with ice, and you’re ready to pour.
- The presentation is downright adorable. The fluffy marshmallow perched on the rim mimics a bunny’s tail, making it extra special for Easter. The coconut-rimmed glass adds a little texture and charm, making this cocktail just as much about the experience as the flavor.

Ingredients
The cocktail base is two liquors: whipped vodka and coconut rum. Yes, whipped vodka is a flavored vodka, and it’s actually pretty tasty. (I use the Pinnacle brand.)
Along with the liquors, you’ll need half and half, cream of coconut and pineapple juice. I know you might be tempted to skip the pineapple juice, but don’t. The tropical fruitiness that it brings to this martini is a must.
- Whipped Vodka or Vanilla Vodka – This adds a smooth, slightly sweet flavor that enhances the creamy coconut notes in the martini. Whipped vodka brings a hint of light, airy sweetness, while vanilla vodka offers a warm, comforting touch.
- Coconut Rum – A must for that signature tropical coconut flavor, coconut rum infuses the drink with a subtle sweetness and a little island-inspired depth.
- Half and Half – This creates a luscious, creamy texture that makes the martini smooth and indulgent without being too heavy.
- Cream of Coconut – A rich and sweet coconut addition that intensifies the coconut flavor while adding a velvety texture. My favorite for cocktails is the Rèal brand cream of coconut.
- Pineapple Juice – Just a splash brings a touch of bright, citrusy sweetness that balances the creaminess and enhances the tropical flavors.
- Honey – Used to rim the glass, honey helps the coconut stick while adding a little extra sweetness to every sip.
- Sweetened Coconut (chopped) – Pressed onto the rim of the glass, it creates a beautiful, textured finish while reinforcing the coconut flavor in every sip. Giving it a rough chop makes it easier to stick to the glass.
- Marshmallow – The star of the garnish! This little addition acts as the ‘cottontail’ for a festive Easter touch, making the drink extra charming.

How to Make
This martini recipe is pretty straightforward, but I’ll walk you through it regardless. For your convenience, I’ve also provided a full ingredient list and detailed instructions in the printable recipe card below.
- For garnish of this Easter cocktail, start by rimming a martini glass with coconut. To help the coconut stick, give it a quick chop before using it. I also prefer to use honey as the “glue.” That seems to work best. Set this aside.

- Fill the cocktail shaker with ice. Top with the whipped vodka, coconut rum, half and half, cream of coconut, and pineapple juice.
- Shake vigorously.

- Strain into your prepared martini glass.
- For the pièce de résistance, cut a small slit in a marshmallow and hang it on the edge of the glass.

Voila! Adorable and delicious. This Cottontail Martini is a winner!
It’s a festive, fun, and easy drink to mix up for spring gatherings, Easter brunch, or a seasonal happy hour. A simple yet creative way to bring a little extra charm to your holiday celebrations.

Make it a Mocktail
I’m certain that everyone, including children, will want to partake in a cottontail martini. If you want to create this recipe for kids (or adults that don’t imbibe), just substitute the rum and vodka with milk. (You may want to use a plastic martini glass too.)
It’s that easy! Cheers to all!

Frequently Asked Questions
What can I use instead of whipped or vanilla vodka?
If you don’t have whipped or vanilla vodka, coconut vodka is a great alternative to enhance the coconut flavor even more. Regular vodka can also work, though the drink will be slightly less sweet.
What’s the best way to rim the glass with coconut?
Using honey helps the coconut stick well, but if you prefer, you can also use light corn syrup. Be sure to give the coconut a rough chop before pressing it onto the rim for better adhesion and a more even texture.
How should I serve this drink for a party?
For a party, prepare the coconut-rimmed glasses ahead of time so they’re ready to go. Mix the cocktail ingredients in a pitcher (without ice) and store it in the fridge. When guests arrive, shake individual servings with ice and garnish with a marshmallow “cottontail” for a fun and festive touch!

You are always so CREATIVE, making this a mocktail for the grands and a real one for us Hoppy Easter Michael.
These are adorable!! (and so are you!). I have to make these! Question, what kind of coconut? Frozen, shredded coconut? Thanks!
I used the sweetened coconut in the baking aisle. But you could really use whatever you’d like.
