They’re one of those reliable little joys that’s easy to make, endlessly customizable, and somehow just a little more fun when layered into a pretty glass. (In fact, they are one of my go-to breakfast recipes.) Whether it’s a quick breakfast, a light lunch, or an afternoon treat, parfaits have a way of feeling both wholesome and a little bit special.

  1. Add the berries and lemon juice to a small saucepan and set over medium heat. Cook for three to four minutes, stirring occasionally, until the berries begin to release their juices.
  2. Once the mixture starts to bubble, lower the heat slightly and let it simmer for another two to three minutes. Use a spoon or fork to gently press the berries and help them break down a bit. You want them soft and juicy, but not completely mashed.

How far in advance can I make the berry compote?

The compote can be made up to four or five days in advance. Just store it in an airtight container in the refrigerator and let it cool completely before assembling your parfaits.

Can I make these parfaits ahead of time?
