
Strawberry mojito

Ingredients
- 2-3 tsp caster sugar, plus 1 tbsp
- 1 lime, cut into wedges, plus an extra wedge for the sugar rim
- 8-10 fresh mint leaves, plus a sprig to garnish
- small handful of chopped ripe strawberries, plus a whole strawberry to garnish
- 50ml white rum
- soda water
Method
- STEP 1
Put 1 tbsp sugar on a small plate and spread evenly. Run a lime wedge around the rim of a large tumbler or highball glass and dip the rim into the sugar until crusted.
- STEP 2
Put the lime wedges, mint and remaining sugar into a highball glass and muddle together using the end of a rolling pin. Add the strawberries and gently muddle again to release the juices.
- STEP 3
Pour over the rum and gently stir. Add ice, top up with soda water and garnish with a mint sprig and whole strawberry.
