
Rigatoni with courgette, lemon and parmesan

Ingredients
- 150g rigatoni
- olive oil
- 1 clove garlic, crushed
- 1 red chilli, finely chopped (optional)
- 2 courgettes, grated
- 1 lemon, juiced and zested
- (or vegetarian alternative) 30g parmesan, grated
Method
- STEP 1
Cook the pasta following the packet instructions. Drain, keeping back 2 tbsp of the cooking liquid.
- STEP 2
Heat 2 tbsp olive oil in a frying pan and add the garlic and chilli and cook for a minute. Add the courgettes and fry for 5-6 minutes until softened. Stir through the lemon juice and zest.
- STEP 3
Toss the pasta with the courgette, parmesan and pasta cooking liquid and serve.
